Extend Compose project to offer multiple Kafka providers

Current Behavior

The current Docker Compose project only includes Redpanda as Kafka provider.

Proposed Behavior

We should offer ways to choose a preferred Kafka provider, e.g. Apache Kafka, Redpanda, Tansu, and more. The setup should default to Apache Kafka, as explained in #854.
