Hey! I added a shortcut to the Copy as -> Custom Encoding option now. It's SHIFT + ALT + C by default but can be changed in the settings. (f96c51e) The ability to modify strings in general in the custom encoding column will require much more effort though. The issue is, a lot of encodings are variable length so modifying a character might need to use up more or less bytes than the previous one. Besides, some encodings we currently have use multi-character values to represent single characters (for example old games often used control codes in their text and many are represented as strings like |

This program immediately seems more flexible than HxD, but there are some features I'd like to see -- especially for those encoding in languages besides ASCII.
