Standardize "enable setting" language

Describe the Feature/Enhancement

In the mobile app, some settings need to be ENabled to be DISabled, which caused confusion in the server settings around the watcher. We should reverse the language and flip the default values so behavior is unaffected.

Why would this be helpful?

Clear up confusion about app settings.

Future Implementation (Screenshot)

Reverse the language and default values for these settings. So "Enable auto rewind", etc.
