Inconsistent Device Detection and confusing defaults when detection fails

Seems like we need to re-work the detection a little and then default to the tbeam instead of the rak 11200 ESP 32 device.

• Maybe better alert the user that if a device does not already have meshtastic on it we can't tell the difference between the various boards other than their platform (ESP32, NRF52)

• Look at detection for 1.3 firmware, it does seem that even meshtastic devices are detecting properly anymore
