Server Configuration on each project

I don't know if this question makes sense, but I'm curious that for each project, it doesn't allow me to configure a different version of java for the server.

You can create separate servers using the same home directory (or different home directories, or different configuration files, etc) but different settings if you want. The properties json representing the server adapter object can customize which java you want to use when running it.
