Release 8.0.0 with update to .NET 8

Hi everyone!

I just created a preview release for MSSQL sink 8.0.0 with PR #594. Serilog.Sinks.MSSqlServer 8.0.0-dev-00112 was pushed to nuget (https://www.nuget.org/packages/Serilog.Sinks.MSSqlServer/8.0.0-dev-00112).

These are the release highlights.

• Updated to .NET 8
• Updated nearly all dependencies
• Improved build script (build samples, fail on vulns, ...)
• Removed some obsolete vulnerability fix dependencies
• Fixed missing dependency in AppConfigDemo sample

It was time for the .NET 8 update because .NET 6 support is ending soon (November 2024) and .NET 8 as the new LTS release is supported until November 2026.

I also updated almost all Nuget packages of the sink to the latest version (Moq and coverlet made problems but they are only in the test project, so they could also be updated later without having a new major version increase of the sink).

Anyone who is interested and has some time on their hands, please give the 8.0.0 preview a spin and let us know of any problems. It would be of a great help and we appreciate it a lot.
