Refresh the README and fix the community files
Rewrite the README around the structure of springdoc.org/v2: getting started, compatibility, the modules and features linked to their sections in the documentation, demos and the help channels. It replaces the static build badge pointing to the former Jenkins server with the Snapshot workflow badge, and fixes the broken links and images (sponsor logos and screenshot now served as webp, demos.springdoc.org, the demos repository, table of contents anchors). SECURITY.md keeps a single reporting channel, CODE_OF_CONDUCT.md uses a Markdown heading, and FUNDING.yml uses the springdoc Open Collective.
