task: deduplicate config values in suitecrm container script

i.e. currently we have hard-coded environment variables in docker-compose.yml for the suitecrm container script.

It would be more convenient to have the script generate the docker-compose file, letting us set the suitecrm username, password, etc. in the shell script.
