feat(oaf): Add support to return feature properties in a specific order and/or exclude certain properties.

Description

Adds support to return feature properties in a specific order. Also adds the ability to exclude certain properties from API responses. Both features work in HTML and (Geo)JSON.

Do note that properties in GeoJSON are a JSON object which has no ordering so consuming tools may still decide to render properties out-of-order.

Also upgraded to Go 1.23 since we upgraded a lib that uses Go 1.23 features. Also added a new feature to the same library: wk8/go-ordered-map#45.
