Align shipped manifests and Helm defaults with v1.4.1

Problem

The v1.4.1 tag and current main both point to 4b977f9, and the
projecthami/ascend-device-plugin:v1.4.1 multi-arch image is available.

However, the official installation paths still deploy v1.4.0:

• The standalone manifest pins v1.4.0.
• The Helm appVersion is v1.4.0.
• image.tag is empty by default and the image helper falls back to that appVersion.
• The documentation installs the raw manifest from main.

Users following the documented installation therefore silently miss the fixes
shipped in v1.4.1, including #106.

Acceptance criteria

• The standalone manifest and default Helm rendering use v1.4.1.
• The chart version is bumped and generated chart documentation is refreshed.
• helm template verifies the expected image for the default configuration.
• CI prevents the manifest, chart appVersion, and released application image
  from drifting again.

Thanks for reporting this. #136 addresses the version mismatch. We've also asked for a check to catch missing chart version bumps.

After it merges, we should verify that chart 0.1.1 is published and both the standalone manifest and default Helm install deploy v1.4.1.
