Config updated: Working per server/library scheduling with ofelia (#2142

)

* Updates multi server setup documentation to working scheduling.
* Updates image versions to be cohesive so that all of them have latest, and updated config volume path for multi server setup
* Updates documentation to use a fixed minor version of ofelia
