allow category scatter plots on existing axes

added ax to category_scatter so it can draw into existing subplots, with a side-by-side example. calls without ax still create a new figure. both linux ci jobs explicitly run the new tests because normal collection skips plotting tests. fixes #636.

checks

• regression tests, notebook and changelog updated
• four new axes cases fail before the fix; all five focused tests pass afterward
• all notebook cells executed; converted docs and checked the plot
• plotting flake8, changed-file black/isort and git diff --check passed

25 plotting tests pass with test_pca_corr_graph.py excluded; that file blocks collection with an existing Version < str error. full-site build was not rerun because of the known Markdown-extension incompatibility.
